Shrimp & Grits is a signature dish in the Lowcountry. One of the essential ingredients is, of course, beautiful locally caught shrimp. These were bought at the Charleston Farmers Market and had been swimming in local waters that morning. The red tool is a shrimp deveiner — which is used to remove the shrimp’s shell and “vein” (more like intestine).

It’s going to be a great dinner tonight!
